Gifcam
Like Snipping Tool but it lets you record GIFs from your screen display instead.

Make sure you get it from the creator's blog Bahrani Apps as other sites like softonic have bundled it wih malware.
PDF Arranger
Lets you easily rearrange/resize/add/remove pages in a PDF document and edit the metadata.

I know GitHub is scary but just scroll down there's a Downloads section.
It was surpisingly difficult to find something to let me edit all of these things in one place, I tried SO many and this one is really lightweight and good!
